  5. Using a hand blender, blend all ingredients together. Once blended, cook for another 10 minutes.
  6. Add more salt for flavor if needed.

Add chopped fresh tomatoes and basil. In a large saucepan, bring the garlic, tomatoes and tomato puree to a boil. Transfer the roasted tomatoes, onions and garlic to a pan, along with the diced potatoes and the vegetable stock. Bring to the boil, the squeeze the garlic cloves out of the skins and add to the pan with the torn basil leaves. Stir in garlic, carrots and onions.
